Food history is deliberately confusing, because every kitchen wants its favourite dish to be older and more local than it really is. Missing a few of these mostly means you have been told the marketing version, which almost everyone has. The reward for looking properly is that meals get more interesting: a bowl of curry becomes a record of ships, empires and one plant family that travelled halfway round the planet.

Nobody can settle a dish's birthplace when the earliest evidence is a newspaper clipping and a family memory. You are tracking ingredients rather than dishes, which is the professional approach, because an ingredient leaves records in ships' manifests and herbals while a recipe leaves almost nothing. Knowing when a plant reached a continent tells you the earliest possible date for every dish built on it, and you were clearly using that logic. It is the closest thing food history has to a reliable clock. It also explains why a recipe's age and its ingredients' ages so rarely match.
